Full Tasting
A landmark bottling from Dumfries & Galloway. Ninefold ferment their own molasses long and slow, then run it through a small copper pot in a converted farm steading.
Nose: warm brown butter, salted olive brine, orchard apple skin and a whisper of engine oil.
Palate: dense and oily, waxed leather, cocoa nibs, a lick of maritime salinity, black tea. Long, drying finish with cracked pepper and burnt toffee.
One of the most compelling craft rums produced in the UK — proof you don't need the tropics to make a serious spirit.
